For small projects I've had good results loading the .jpg into Google Translate. Then go over the highlighted words. Lastly copy the corrected text into a .txt file.
To get clear images good light is essential. I like to take scan-photos as near to window as possible, on a bright day.

It did seem to me, reading the first post, that your problem was mainly lighting and not being able to rotate the scan less than a whole degree. That is why I made that expectations comment. I think if maybe you have too high expectations.
Scanning will never be as good as the original. I look at a successful scan as a scan that is perfectly readable, not something that is indistinguishable from the original.

My advice would be to stick with a phone as a camera. Do not focus too much on the resolution. I used to take nice and clear photos of A4 pages with 1Mp camera. 12 Mp is plenty. In my last book shooter I used the "Open Camera" app on my phone. It has most of the features you want. For Ipho...

About the only thing I can think of is lighting. Try getting more light, see if that can help the algorithms in the software.

Interesting KISS design.
I tried Scannable some years ago. I had to stop using it because Finance felt the quality of the photos was not acceptable for Concur expense reports.
How good is the quality today?

Some out of the box suggestions GemmaGem. I prefer to have most things solved before taking the pictures. In my experience the less corrections software has to do, the better the results are. I have used fishing line over a page to straighten it a little bit without having your fingers in the photo....
